The ingredients needed to make Pork Vindaloo:
- Make ready 4 cloves
- Get 4 cardomon
- Prepare 2 bay leaves
- Get 1 cinnamon stick/quills
- Prepare 1 Tbs cumin powder

- Take 2 tsp Kashmiri chilli powder
- Make ready 1 Tbs paprika
- Prepare 1 onion sliced
- Take 8 cloves garlic lightly crushed and sliced

- Prepare 1 big tomato
- Prepare 1 kg pork belly (cut into 2 cm cubes)
- Make ready 2 Tbs brown malt vinegar
- Get Vegetable oil

Marinate pork with Indian flavours for this traditionally very spicy, aromatic curry - decrease the number of dried chillies for less heat. If followed exactly makes a mild-medium spiced vindaloo. To spice it up, add fresh chilies and more cayenne. I served with saffron infused rice and an inexpensive bottle of Cotes du Rhone.
Instructions to make Pork Vindaloo:
- If you don't have Kashmiri chilli powder, use 1 tsp of chilli powder and add extra paprika to bulk up the powder mix. chilli powder is Spicer than Kashmiri chilli powder***
- In a medium sized dish,heat enough olive oil to cover the base of the dish.
- Add whole cloves, cardamon, bay leaves, cinnamon stick, onion and garlic. Fry for a few minutes. Do not brown onion.
- Add the ginger, tomato and stir for 1 - 2 minutes.
- Add the spices to onion mix and stir fry for 2 - 3 minutes. Add the vinegar during this process.
- Add the pork and stir for a few minutes. Add salt (I start with 2 tsp)
- Add 2 cups of water to the dish and cover cook on low heat (stirring occasionally) till meat is tender. Add more salt if required.
To spice it up, add fresh chilies and more cayenne. I served with saffron infused rice and an inexpensive bottle of Cotes du Rhone.
