- Pre heat an oven to 200C
- To a baking tray, add the pork mince, chinese five spice and miso paste. Mix together and then drizzle with a little olive oil. Place in the oven for around 10mins or until the mince starts to crisp.
- Meanwhile, grate the carrot and courgette. Once the meat is ready, remove the tray from the oven, give everything a good mix around and the lay the grated vegetables over the top. Place the tray back in the oven for another 10mins.
- Peel and grate the garlic and ginger. Heat a wide based pan over a medium heat with a drizzle of vegetable oil. Once hot, add the ginger and garlic, cook for around 2-3mins or until fragrant. Boil a kettle of water.
- Crumble the stock cube into the pan and then add the tomato puree, soy sauce and 150ml boiled water. Add the meat and vegetables from the tray, give everything a good mix and then cook until the sauce is reduced and resembles a ragu like consistency.
- Serve in the leaves of the lettuce.
