  1. Pre heat an oven to 200C
  2. To a baking tray, add the pork mince, chinese five spice and miso paste. Mix together and then drizzle with a little olive oil. Place in the oven for around 10mins or until the mince starts to crisp.
  3. Meanwhile, grate the carrot and courgette. Once the meat is ready, remove the tray from the oven, give everything a good mix around and the lay the grated vegetables over the top. Place the tray back in the oven for another 10mins.
  4. Peel and grate the garlic and ginger. Heat a wide based pan over a medium heat with a drizzle of vegetable oil. Once hot, add the ginger and garlic, cook for around 2-3mins or until fragrant. Boil a kettle of water.
  5. Crumble the stock cube into the pan and then add the tomato puree, soy sauce and 150ml boiled water. Add the meat and vegetables from the tray, give everything a good mix and then cook until the sauce is reduced and resembles a ragu like consistency.
  6. Serve in the leaves of the lettuce.
