- Now add the soya mince. Add 1/2 teaspoon lemon juice. And keep stirring it on medium heat for couple of minutes. Transfer it to a bowl and let it cool.
- In a bowl, mash the potatoes. In a pan, heat oil, and again add rest of the finely chopped onion. Put salt, paprika, coriander powder.
- Now add the mashed potatoes and half teaspoon lemon juice. Stir it till the potatoes start looking golden brown. Transfer it in a bowl
- Cut the top of the bellpeppers and scoop the seeds out. Now gently stuff 2 bell peppers with soya mince mixture and 2 with potato mixture. With each spoonful press it gently so the mixture is nicely set and doesn't come out.
- Heat 1 tablespoon oil in a pan, and put the stuffed bell peppers. Cook on medium heat. Flip them occasionally so they are evenly cooked.
