- In a bowl, mix together the ginger-garlic paste, salt, red chilli powder, pepper powder, zaatar, sumac, olive oil, lime juice and required quantity of water to make a paste.
- Smear this paste all over the chicken and marinate for 6-7 hours, preferably overnight in the fridge.
- Grill for 30 minutes, basting with oil at intervals. Serve hot, garnished with lettuce, coriander leaves and fresh chilies.
Combine all ingredients, except olive oil and chicken into food processor and puree untill smooth. To make the grilled chicken extra flavorful, I like to marinate it overnight with lemon juice, garlic and fresh herbs like rosemary or oregano. Drizzle the remaining tablespoon olive oil over the quinoa, then add grilled chicken, feta, salt and pepper to taste and toss well. Serve the chicken with the sauce inside a lettuce bun for a Paleo "chicken sandwich," or try it with a quick side salad grilled vegetables, or maybe just slices of fresh ripe tomatoes drizzled with olive oil and vinegar. Add chicken thighs and mix to coat with the marinade.
